This typical specialty of Burgundy is obtained by distillation of the solid parts (stems, seeds, skins) resulting from the pressing of burgundian grapes after the harvest.
Distilled with care, the brandy is then aged in oak barrels where it acquires roundness and smoothness, while retaining its aromatic characteristics that make its reputation.
SLOE PRUNELLE A LA FINE DE BOURGOGNE – 35% vol
This eau-de-vie is obtained from sloe soaked in alcohol and then distilled in copper stills. The spirit collected is then blended with the Fine Burgundy aged in oak casks.
PLUM BRANDY - VIEILLE PRUNE - 42% vol :
After distillation of fermented round and fleshy plums harvested in October, the powerful and fruity spirit is aged for 10 years in oak barrels where and acquires finesse and subtlety.
PEAR BRANDY - EAU-DE-VIE DE POIRE WILLIAM - 45%vol :
The Brandy fruit. Placed in tanks, William pears, ripe to perfection are slowly fermented and they contain sugar turns into alcohol. They are then carefully distilled and produce what many connoisseurs consider the most beautiful fruit Eau-de-Vie.
RASPBERRY BRANDY - EAU-DE-VIE DE FRAMBOISE - 45% vol :
This brandy has the powerful scent of delicate raspberries harvested at perfect maturity. The fruits are soaked in barrels for several weeks before being distilled and producing the best red fruit brandy.
YELLOW PLUM BRANDY - EAU-DE-VIE DE MIRABELLE - 45%vol :
The Mirabelle of Lorraine are placed in vats for fermentation for 5-6 weeks. After distillation, the spirit is aged for 2 years. Its aroma and flavor of fruit are very fragrant and slightly "biscuit" and offer a great delicacy.
